Breakfast Oat Cups

This was a recipe I stumbled across on good old Pinterest, I am always up for making breakfast and snacking more fun and I thought this was perfect. Also it is made from ingredients that you most probably have sitting in your cupboards already which could make this recipe very inexpensive. You will need:

  • 1 1/4 cup of rolled oats
  • Agave or honey
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Cinnamon powder
  • Apple sauce or mashed banana – this is optional, I used neither.

What to do:

  • Prepare cupcake cases or grease a muffin tin
  • Whisk together honey or agave, vanilla extract & apple/banana if you are using either.
  • In a separate bowl stir together all the other ingredients
  • Combine the two bowls and stir until all the ingredients are evenly mixed.
  • Put your mixture in to cupcake cases or muffin tray and make sure there is a nice dip in the middle to make a cup shape and the sides are firmly pressed up. The mixture may be slightly crumbly but that will be sorted in the next step.
  • Place muffin tray/cases in the fridge for an hour. In the mean time preheat the oven to 170 degrees
  • Remove from the fridge and press the sides of the cups firmly again.
  • Bake the oat cups for 12 minutes, take them out and press the sides into the muffin tin with a spoon. Just to make extra sure they are all cemented into place which they should be.
  • Let them cool down for 20 minutes before removing from tins or cases.

These can be frozen and thawed if you wish to.

You can choose what ever you want to fill these bad boys. I used Greek yoghurt with chopped up fresh mango and a drizzle of honey.

They were honestly so nice. Crunchy, chewy and filling. The good thing as well is that they can last for a few days so that is your breakfast or snacks sorted for a good few days. They are pretty much guilt free too!

A lovely day in Lavenham

 

I decided to take off a couple of days off work a few weeks ago and spend those 2 days with my bestie, we decided one day we would go for a walk in the forest which we did and walked 10 miles, YEP 10. Safe to say we were zonked after. On the other day we decided to go to a little village we had never been to before and Lavenham was the one we chose, I had already heard nice things about Lavenham so I was looking forward to going. Me and my friend are very similar in terms of the kinds of days out we enjoy, which is probably why we have been best friends for so long or at least that helps.

When we first got to Lavenham we both just said how incredibly cute it all was. It is filled with old medieval looking buildings, pubs, little shops & tea rooms (our fave). It is also very much in the countryside which makes it even nicer.

We parked outside a spa which we did not know at the time that it was a spa. We went in for a little look around as they have a shop section where you can browse all the products they sell. The ladies in there were very friendly and helpful. We could see outside in to the little courtyard that there was a hot pool built in to the ground, it was small and square but looked very effective. We both decided that we were going to book and go back for one of their packages they do there at the Weavers House Spa which include afternoon tea and treatments. I found it very tranquil and modern, I am looking forward to booking a day there!

Next we went on and walked up the street a bit further and came across a shop called Posy. You know that when you look at a shop and just think I know I’m going to love this one. We went in and I think the only words that came out of our mouths was ‘wow’ ‘ooooh’ and ‘omg’. I wanted to put everything that was in this shop in my basket and fill my house with it all. We were just in awe over this shop, it was filled with everything you can imagine candles, bath salts, bowls, mugs, jewelry, bags, handmade cards, kids bits, pictures, quirky one off bits and so much more. We spoke with the lovely lady who owns Posy, she advised us that she had only been open for 3 weeks and wanted the items in the shop to be different to what you would usually find in shops similar, I defo think she nailed it! The owner is also an artist, she paints pictures in her spare time and they were all beautiful. We ended up having a quite long conversation with the owner which is always lovely when you go to a shop and the owners make time to have conversations with their customers. Of course both me and my friend didn’t leave empty handed. This is a shop I will 100% go back to!

After all our mooching around we then decided we were hungry but now we had to choose out of the many tea rooms. We decided to go back to one that we saw when we left the car. A tea room called Munnings Emporium and Tearooms in a big old crooked house, lunch with a side of history and character.

We had a lovely lunch which consisted of sandwiches, soups, cake and lots of tea. What did really impress me was the tea room had quite a large selection of gluten free foods, I eat gluten free so this was fantastic for me. Everything was home made and they had such a wide selection of foods. As the tearoom is situated in a very old crooked house it was very interesting to look around, the room has about 5-6 tables in and there is more seating upstairs but it does feel like you are having lunch in someone else’s front room which is a bit bizarre but I guess that’s all part of the experience as it is a house. There is also gift shop which was spread out from downstairs to upstairs. You are able to go and walk around the upstairs via a extremely narrow and steep staircase. It was a very interesting place and would certainly go back for lunch!

I would advise anyone to go and visit Lavenham if you are around that area, have a walk around and some lunch. Everything has pretty much been kept the same for many years so it is an extremely vintage place which makes it special.

The A-Z Of Me

I personally love blog posts where you get to know the person behind the blog better. Recently on twitter I saw this blog post by Lady Writes and thought it was such a good idea. I somehow managed to find something to write for each letter of the alphabet. God knows how, it took me a while, no doubt I have forgotten some main things that I love/hate. Hope you enjoy this.

Anxiety – The bain of my life. I had to include anxiety as it is something that I suffer/deal with on a daily basis. Unfortunately it is something that is very much in my life.

Baking – I love to bake, I find it so calming and relaxing. Anyone who knows me knows that baking is my thing. Its something you can do and put all your time and energy into whilst you are doing it. Also it lets your creative side out to play!

Cats – Cats, cats, cats. I love cats.

Devon – Devon is somewhere I have been going to since I was a baby. We have a family home in a little village called Beer, I absolutely adore this little fishing village. This place definitely stole my heart.

Elderflower – I’m a sucker for anything Elderflower…

Friends – Real life Friends and the ones on the TV. Friends are the people we turn to no matter what. Besides our families, friends are very important people! The TV programme Friends is also my favourite thing on TV ever.

GCSE’S – I did not do well in my GCSE’S. Lets just leave that there, shall we!

Home – I am without a doubt a complete home bird. My home to me is like my little safety net in life. Especially when I am suffering with anxiety and I am not at home, I’m just desperate to get back to my little safe haven.

 IPhone – Hate to say it but my iPhone is definitely something that I could not live without and is a very staple part of my life. As sad as that is.

Jack Daniels – Hate the stuff, even the smell. Bleeeeugh

Kardashians – Yep, I love em, all of em. I can’t help it, I have been a fan since day one. Personally I love Khloe.

Luke – This is my boyfriend. Apple of my eye he is.

Makeup – Definitely a huge staple in my life and is also where a chunk of my money goes every month, OOPS.

Nephew – This little boy just makes my heart hurt. He literally lights up my life. He is 100% the best human ever!

OCD – Another daily struggle of mine. Some days it is at an acceptable level and other days it gets a bit out of hand. OCD is a very frustrating thing to live with. (I am happy to do a post on this if it is requested.)

Pyjamas –Without a shadow of a doubt PJ’s are my favourite things to wear. I feel like I want to make the dress code to my house ‘Pyjamas only’. I also love to buy pyjamas. I’m not the only one who can’t leave Primark without a new pair of PJ’s. I know I’m not.

Quitting – I quit smoking in September 2013, it was the best thing I ever did. I smoked for 9 years. I just got to the point where I wasn’t enjoying it any more and it was actually making me feel anxious. I literally snapped up my cigarettes whilst I was on holiday in Turkey and never picked another one up ever again.

Roast dinner – My number one dinner. I always fancy a roast!

Sunsets – Sunsets are by far one of my favourite things in life. They are so beautiful and relaxing to watch. I just love seeing the sun going down and all the colours it creates in the sky.

Tea – OBVS. Do I even need to go in to this? If you know me, you know I’m tea queen.

Urinate – I am actually laughing as I write this because I know it is TMI but I have the smallest bladder and need a wee so many times in the day. It’s actually such an inconvenience. People who know me know this fact about me and people who meet me for the first time tend to comment on the fact that I pee a lot.

Venice – I am dying to go to Venice. It looks incredible.

Water – I LOVE water. Drinking it, being in it, seeing it, hearing it. I love anything water related. Water makes me feel incredibly calm. I am also a massive lover of streams. Don’t ask me why but I just am.

X-Ray – I mean I could not think of any thing else that started with X. I have only have 2 X-Rays that I know of. One was of my teeth in the dentist and the other was on my wrist.

YouTube – I’m addicted.

Zzz – I love sleep, I can’t get enough. Although I do struggle getting to sleep.
